Cooking Princess

Welcome to the first addition of Cooking Princess ! Our recipes for today are....
Potato Leek Soup
Russian Tea Cakes
Peach Clouds

Peach Clouds
INGREDIENTS
6 egg whites
1/4 teaspoon salt
1/2 teaspoon cream of tartar
1 1/2 cups white sugar
1 teaspoon vanilla extract
6 fresh peaches - peeled, pitted and sliced
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
Beat egg whites in clean, dry bowl with electric mixer for 2 minutes. Beat in salt and cream of tartar. Continue beating and pour in sugar, a few tablespoons at a time, until mixture is glossy and stiff peaks form. Fold in vanilla.
Place in greased pie plate or spoon or pipe onto parchment-lined baking sheets.
Place in preheated oven and turn oven off. Leave meringue in unopened oven 8 hours or overnight. To serve, place meringue on serving platter and arrange peaches on top.
(NOTE: You might want to add a little less sugar!)

Potato Leek Soup
INGREDIENTS
2 tablespoons unsalted butter
1 cup sliced leeks
1 cup chopped onion
1 2/3 cups chicken broth
4 cups milk
1 1/3 cups potatos
1 teaspoon salt
1/2 teaspoon celery salt
2 tablespoons chopped fresh parsley

DIRECTIONS
Melt the butter in a large pot over medium heat. Saute the leeks and onion in the butter for 5 minutes, or until tender. Pour in the broth and the milk and mix well.
Bring to a boil, reduce heat to low and simmer for 5 minutes. Stir in the potato flakes, salt, celery salt and parsley. Allow to thicken and heat through.

Russian Tea Cakes

INGREDIENTS
1 cup butter
1 teaspoon vanilla extract
6 tablespoons confectioners' sugar
2 cups all-purpose flour
1 cup chopped walnuts
1/3 cup confectioners' sugar for decoration

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.
Bake for 12 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. I also like to roll mine in the sugar a second time.

It's the holiday season!


Aren't you excited!? Even if you don't celebrate chrismas, there is always something going on. I can't wait until Thanksgiving! I love turkey and the cranberry jelly! AHHHH... This is a laptop made of gingerbread!! I want it. Actually I'm making some on sunday. Also here is a turkey made out of chocolate!
